The name "Bianchetto Truffle" ( in italian "bianco" means "blank" ) is given to this truffle because the Tuber Albidum Pico ( this is its scientific name ) can be confused with Fine White Truffle ( Tuber Magnatum Pico or Alba Truffle or Acqualagna Truffle ) . Thiese two varieties of truffle share the same habitat , but the time of harvesting are different : fine white truffle can be harvested from September to January , Bianchetto Truffle can be harvested from November to April ( March , Marzo in italian , is the most importan month for the harvest of this truffle , so often it is called also "Marzuolo Truffle" ).
The price of Bianchetto Truffle / Marzuolo Truffle is obviuosly less than Fine White Truffle price , and it from 400 Euro to 600 Euro per kilo. Because of its fragrance it can be used to flavour a lot of typical italian food , like tagliatelle , polenta , rice.
